Rich, creamy and irresistible pimento cheese is piled on top of a flaky buttery biscuit with a few slices of salty-sweet country fried ham, bright and flavorful pickled red onions, and earthy and vibrant bright green scallions. It's comfort food at its finest and it's bite sized so you don't have to feel guilty!
These little tea-time sandwiches are the perfect appetizer for baby showers, luncheons, or when you just really need to sit on the couch and binge eat until you're satiated. And although this recipe only makes one sandwich, I prefer to serve these by the dozen with a few pitchers of mimosas or bloody marys.
If you're vegetarian, leave out the pan-fried country ham and try adding a thick slice of salted tomato or some herbed buttermilk dressed greens.
- For The Pimento Cheese:
- 1 tbsp. duke's mayo
- 5 dashes franks hot sauce
- 1/8 tsp. yellow mustard
- 1/4 tbsp. grated red onion
- 1 pinch salt
- 1 pinch sugar
- 1 pinch garlic powder
- 1/2 tbsp. chopped pimentos
- 1 tbsp. hook's aged cheddar
- 1 tbsp. grand cru
- For The Sandwich:
- 1 biscuit
- 2 tbsp. pimento cheese
- 1 tbsp. pickled red onions
- 1/2 tsp. scallions, sliced into thin rings
- 1 splash franks hot sauce
- 1 slice of country ham, chopped into thin slices
Make the Pimento Cheese:
In a small bowl, combine the mayo, franks hot sauce, yellow mustard, grated onion, salt, sugar, garlic powder and stir until smooth.
Add in the cheddar and pimentos and set aside, letting the flavors come together as your bacon candies.
Assemble the Sandwich:
To begin making this sandwich, heat a pan to medium high and place the country ham down in the pan. With the flat end of the spatula, press down the meat and let the ham cook on one side until it starts to brown, then repeat for the other side so that they both have a nice sear on them.
Next assemble the sandwich by gently cutting the biscuit in half and smearing on the pimento cheese.
Next add the pan-fried country ham and then a splash of hot sauce.
Finish by adding the pickled red onions, the scallions, and the top half of the bread.
