Try making this delicious meatloaf for yourself. For the leanest and most flavorful ground pork, grind it yourself. If you don't have a meat grinder, a food processor will usually do a good job of mincing the meat. Freshly ground meat can save money, and it's much better tasting.
- 1 pound extra-lean ground beef
- 1 pound lean ground pork
- 8 ounces (about 1 cup) red pepper or pepper and onion relish, divided*
- Dash cayenne pepper, optional
- 1 large egg
- 1 cup fresh soft breadcrumbs
- 1/2 cup milk
- 1 1/2 teaspoons salt
- 1/2 cup ketchup
Coat a 9x5x3-inch loaf pan with cooking spray. Heat oven to 350 F.
Combine the ground beef, pork, 1/2 cup relish, egg, breadcrumbs, milk, salt, and pepper. Mix gently until well combined.
Pack loosely into the prepared loaf pan. Mix the ketchup with the remaining relish and refrigerate.
Bake meatloaf for 1 hour and 10 minutes, then top with the ketchup mixture. Return to the oven and bake for 10 to 15 minutes longer.
Serves 6 to 8.
