We purchased the iSi Gourmet Whip so our reviewer could put it to the test in her kitchen. Keep reading for our full product review.

While easy whipped cream is readily available in a can, it’s nothing like the real thing. We were curious what the iSi Gourmet Whip could do for us, so we put the whipped cream dispenser, which froths liquids like cream using nitrous oxide, to the test. After making plain whipped cream, we moved on to flavors before we perused recipes online to see what else we could whip. After experimenting with some true oddities, we’re finally finished—at least, until we run to the store for more cream.

Setup: Easy 

You can think of this cream whipper as a high-end version of the pressurized whipped cream cans you can buy at the grocery store. Unlike those disposable cans, this one is endlessly refillable so you use the whipper over and over, adding your own cream. You can also opt to add sweeteners or flavorings for more interesting versions of whipped cream.To use this whipper, you simply fill it with cream, screw on the top with a dispensing nozzle attached, put a nitrous charger into the holder, and screw it onto the whipper to send the nitrous into the container. A quick shake of the whipper, and it’s ready to dispense super-fluffy whipped cream.

While there’s the capacity to hold more, the whipper should be filled with no more than one pint of cream and other ingredients. There was a fill line on the outside of the container, but we felt more comfortable if we measured the cream to make sure or simply bought it in pints.

This whipper is safe for temperatures from 34 degrees—just above freezing—all the way up to 165 degrees.

While a pint-sized container doesn’t seem very big, the cream expands to make an amazing amount of foam—we estimated that it was at least four times the original volume.

The one downside of this whipper is the manual, which uses a small font and red ink. While there was some useful information in the manual, the whipper itself is simple to use for whipped cream. Luckily, the company website has plenty of information, as well as recipes that range from easy to astonishing, like the 40-second cake recipe that “bakes” in the microwave in 40 seconds. The bubbles from the cream whipper act as the leavening for the cake, making this the perfect recipe for a last-minute dessert.

Performance: Lots to love

The two decorator nozzles included with this whipper dispensed our whipped cream in pretty designs, much like the tips used for piping bags. The included straight stainless steel nozzle didn’t add any extra flourishes, which was great for savory foods.

We loved the texture of the whipped cream this produced. It was super light and fluffy, yet it still held its shape on our many desserts and drinks. We don’t think we could easily achieve a whipped cream that light by hand whisking and probably not with a mixer, either. When we shook the whipper a bit longer after charging, the whipped cream texture got a little denser, which was perfect when we wanted something more akin to a mousse. The nitrous seemed to impart a slightly sweet flavor to our whipped cream, which was a pleasant surprise.

We loved the texture of the whipped cream this produced. It was super light and fluffy, yet it still held its shape.

The fact that this can be used for hot preparations makes it quite intriguing, and we had fun making a warm hollandaise and fiddling around with foamy hot soups. The warm, fluffy, creamy hollandaise was a great garnish for our asparagus.

 We did a lot of experimenting, and while not everything was a complete success, we can blame that more on our silliness than on any problem with the whipper. On the other hand, the chocolate whipped cream, which was nothing more than cream and chocolate sauce, could have been served as a chocolate mousse for dessert any night. A liquor-infused whipped cream was a great adult treat, no matter how we used it.

Quality: NSF-certified for your catering jobs

This whipper is certified by the NSF, or National Sanitation Foundation, which means it can be used in professional kitchens. Therefore, we’re confident it can handle home use with ease. The body of the whipper feels substantial, and all of the parts have the same quality feel. Even the plastic decorator nozzles feel sturdy, and they have stainless steel thread to connect them to the whipper.

Temperature Range: Cold to hot

This is safe for temperatures from 34 degrees—just above freezing—all the way up to 165 degrees. Because of that range, it can be kept in a super-cold refrigerator, and it can handle hot foods. When waiting to dispense hot contents, the iSi Gourmet can be held in a bain-marie (a hot water bath) for up to two hours, which will keep the food warm for serving.

Optional Extras: Infusion kit

The Gourmet Whip is the only one of iSi’s whippers that can be used with their quick infusion kit. Unfortunately, it’s not included with the whipper, even though the company’s recipes feature it regularly. Fortunately, it’s not expensive. It offers a quick and easy way to infuse flavors into fruits and to infuse herbs, spices, and other flavors into liquids. While infusion can be done without the kit, the kit ensures that solids won’t clog the nozzle and that releasing the gas won’t make a mess. 

Ease of Cleaning: Dishwasher-safe

Surprisingly, all the parts are dishwasher-safe, but we found that it was just as easy to wash all of it by hand when we finished one batch and moved on to the next. A cleaning brush is included to get into the small spaces, and the end of the brush is designed so it can grab the head gasket for thorough cleaning.

Price: Just a little expensive

While the price is on the higher end of cream whippers, it’s not the most expensive, with larger whippers costing more. Because of the quality, the warranty, and the fact this can be used for both cold and hot foods, we think it’s worth the cost.

iSi Gourmet Whip vs. iSi Thermo Whip

If your goal is to make hot foams, soups, and sauces along with your chilled whipped cream, the Gourmet Whip we reviewed and the iSi Thermo Whip are the two cream whippers to consider. The Thermo Whip can handle higher temperatures and has an insulated body that keeps ingredients hot or cold longer. 

However, the Thermo Whip can’t be held in a bain-marie to keep it warm. With all of those features considered, it’s really a toss-up between the two. The one thing that gives the Gourmet Whip a slight edge is the ability to use it with the optional Infusion Kit, if that’s of interest.

We loved the iSi Gourmet Whip and geeked out over making hot foams and other crazy creations. We’d recommend it to anyone who might want to do the same, as well as to folks who just want quality whipped cream.
