Jamaican Jerk Chicken

This Jamaican Jerk Chicken is marinated unlike other recipes that simply call for a jerk rub. This chicken is great served on its own or sliced and served on salads or in wraps.

What You'll Need

  • 2 pounds/900 g skinless chicken breasts
  • 1 jalapeno pepper, seeded and diced
  • 3 tablespoons/45 mL water
  • juice of 1 lime
  • juice of 1 large lemon
  • 1 tablespoon/15 mL Dijon style mustard
  • 2 cloves garlic, minced
  • 2 cubes chicken bouillon
  • 1 teaspoon/5 mL dried parsley
  • 1 teaspoon/5 mL ground cumin
  • 1/2 teaspoon/2.5 mL dried thyme
  • 1/2 teaspoon/2.5 mL allspice or cinnamon
  • 1/2 teaspoon/2.5 mL black pepper
  • dash of cinnamon

How to Make It

  1. Combine all ingredients except the chicken and pour into a shallow baking dish or resealable plastic bag. Add chicken and turn to coat.
  2. Cover and place in refrigerator to marinate in jerk seasoning for 30 minutes to 1 hour. Preheat grill. Remove chicken from jerk marinade and pour marinade into a saucepan.
  3. Bring to a boil. Place chicken on grill cooking approximately 7 to 10 minutes per side (or until done), basting periodically with remaining cooked jerk marinade.
