In the summer, it's smart to keep some key ingredients for salads on hand at all times. Have some mixed greens, baby spinach, cooked chicken, veggies, and salad dressings on hand so you can make a main dish salad when it's just too hot to cook.
All of these salads can be served as soon as they're combined, or you can cover and chill them for enjoying later in the day. And remember, with salads you can always delete some ingredients and add your favorites. If you just had a bumper crop of peas, add them to any salad, or if some heirloom tomatoes caught your eye in the Farmer's Market, build a salad around them!
