This is a nice and simple grilled duck recipe. Remember that duck breast should be served rare, so the cooking time shouldn't take too long.
- 4 duck breasts
- 1/2 cup/120 mL olive oil
- 1 lemon (juiced)
- 3 to 4 juniper berries (minced)
- 1 tablespoon/15 mL Worcestershire sauce
- 2 cloves garlic (minced)
- 1 teaspoon/5 mL dried thyme
- 1 teaspoon/5 mL ground bay leaves
- 1 teaspoon/5 mL onion powder
- 1 teaspoon/5 mL black pepper
- 1 teaspoon/5 mL paprika
- 1 teaspoon/5 mL salt
Put all sauce ingredients except salt, in a small saucepan.
Simmer for about 5 to 7 minutes.
Remove mixture from heat and allow to cool.
Place duck breasts in a resealable plastic bag. Pour cooled mixture over duck, seal bag, and allow to marinate in the refrigerator for 6 to 8 hours.
Preheat grill for medium-high heat. Remove duck breasts from the plastic bag, reserving marinade.
Season with salt and place duck on the lightly oiled grill grate.
Allow to grill for 3 minutes, baste with reserved marinade, turn, and repeat the process.
When the internal temperature of breasts reach 145 F/65 C, remove from heat, slice and serve.
