This is a nice and simple grilled duck recipe. Remember that duck breast should be served rare, so the cooking time shouldn't take too long.

What You'll Need

  • 4 duck breasts
  • 1/2 cup/120 mL olive oil
  • 1 lemon, juiced
  • 3-4 juniper berries, minced
  • 1 tablespoon/15 mL Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon/5 mL dried thyme
  • 1 teaspoon/5 mL ground bay leaves
  • 1 teaspoon/5 mL onion powder
  • 1 teaspoon/5 mL black pepper
  • 1 teaspoon/5 mL paprika
  • 1 teaspoon/5 mL salt

How to Make It

Put all sauce ingredients except salt, in a small saucepan. Simmer for about 5-7 minutes. Remove mixture from heat and allow to cool. Place duck breasts in a resealable plastic bag. Pour cooled mixture over duck, seal bag, and allow to marinate in refrigerator for 6-8 hours. Preheat grill for medium-high heat. Remove duck breasts from plastic bag, reserving marinade. Season with salt and place duck on lightly oiled grill grate.

Allow to grill for 3 minutes, baste with reserved marinade, turn, and repeat process. When internal temperature of breasts reach 145 degrees F/65 degrees C, remove from heat, slice and serve.
