This is a nice and simple grilled duck recipe. Remember that duck breast should be served rare, so the cooking time shouldn't take too long.


  • 4 duck breasts
  • 1/2 cup/120 mL olive oil
  • 1 lemon (juiced)
  • 3 to 4 juniper berries (minced)
  • 1 tablespoon/15 mL Worcestershire sauce
  • 2 cloves garlic (minced)
  • 1 teaspoon/5 mL dried thyme
  • 1 teaspoon/5 mL ground bay leaves
  • 1 teaspoon/5 mL onion powder
  • 1 teaspoon/5 mL black pepper
  • 1 teaspoon/5 mL paprika
  • 1 teaspoon/5 mL salt

Steps to Make It

  1. Put all sauce ingredients except salt, in a small saucepan.

  2. Simmer for about 5 to 7 minutes.

  3. Remove mixture from heat and allow to cool.

  4. Place duck breasts in a resealable plastic bag. Pour cooled mixture over duck, seal bag, and allow to marinate in the refrigerator for 6 to 8 hours.

  5. Preheat grill for medium-high heat. Remove duck breasts from the plastic bag, reserving marinade.​

  6. Season with salt and place duck on the lightly oiled grill grate.

  7. Allow to grill for 3 minutes, baste with reserved marinade, turn, and repeat the process.

  8. When the internal temperature of breasts reach 145 F/65 C, remove from heat, slice and serve.
