Mango is a tropical fruit that can range in size depending on the variety, with green or light yellow flesh when unripe and tender, bright yellow or orange flesh when ripe. Peeled, pitted ripe fruit is delicious eaten as-is, with a sweet, slightly tangy flavor. Mango can also be incorporated into a wide range of recipes, from savory dishes to sauces to desserts to drinks.

When selecting mangos, look for firm fruit without blemishes that feel heavy. Unripe fruit will feel hard when pressed while ripe fruit will yield when squeezed. To ripen mango, simply leave it out on the counter. Mango has a large flat pit that clings to the flesh—the best way to remove it is to cut the fruit from the pit, leaving the pit behind.
