Making muffins is easy; it's usually the first thing that beginning bakers attempt. Read all about it in Muffin Science and How to Make Quick Breads. Follow the recipe instructions carefully; some recipes are made the traditional way, by combining the dry ingredients and then stirring in the wet ingredients just until combined; but others are made more like cakes or cupcakes.
You can usually make muffins out of most Quick Bread recipes. Fill muffin cups 2/3 full and bake for 15-25 minutes; start checking the muffins at 15 minutes for doneness.
