Meatball and Fries Casserole is an easy and delicious main dish recipe that uses frozen precooked meatballs, Alfredo sauce, and frozen French fries. Kids love this hearty recipe because it is like a Tater Tot Casserole, but a bit more sophisticated.
The recipe is flavored simply, with just onion, garlic, ketchup, mustard, and cheese. The fries get crisp and golden brown, and the meatball mixture is creamy and flavorful. You could add more veggies to this recipe if you'd like - some chopped bell peppers or yellow summer squash would be very good.
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 (16-ounce) package frozen precooked meatballs, thawed
- 1 (15-ounce) can diced tomatoes
- 2 cups frozen corn
- 1 (16-ounce) jar Alfredo sauce
- 2 tablespoons milk
- 2 tablespoons ketchup
- 2 tablespoons mustard
- 1-1/2 cups shredded Colby cheese
- 3 cups frozen French fries
- 1/3 cup grated Parmesan cheese
Preheat oven to 375° F. Spray a 3-quart casserole dish with nonstick cooking spray and set aside.
In a medium saucepan over medium heat, combine the onion, garlic, and butter; cook for 4-6 minutes until tender, stirring frequently. Add frozen meatballs; saute for a few minutes.
Add undrained tomatoes and bring to a boil; simmer for 3-4 minutes or until meatballs are thawed.
Add Alfredo sauce and bring to a simmer.
Add milk to Alfredo sauce jar, close jar, and shake; add this mixture to the skillet. Simmer 2 minutes. Stir in ketchup and mustard.
Remove from heat and add Colby cheese; cook and stir until cheese is melted.
Pour mixture into prepared casserole dish. Top with the frozen French fries and sprinkle with Parmesan cheese.
Bake, uncovered, for 45 to 55 minutes or until casserole is bubbly and potatoes are golden and crisp.
