Whether you're more into smoked salmon, lox, or gravlax – thisopen-faced salmon bagel sandwich will blow your mind! Pickled red onions not only add an unexpected pop of color but they also add a nice vinegary bite that helps lighten up the smokiness of the salmon. The capers add a salty depth to the sandwich while the scallions add a nice mild onion-y bite.
The goodness doesn't have to stop there either. To make this already mind numbingly delicious sandwich even more opulent, add some bright red mullet roe or deep dark sturgeon caviar to the cream cheese. Why not go all out and add edible gold flakes to the top? Just kidding. You totally don't have to go that far. Let's be honest, this sandwich is pretty baller on its on in the looks and taste department. One word of advice though, be sure that you're using really good ingredients for this sandwich because it makes all the difference!

Avocado toast is definitely a buzzfood these days. Sure, there's already hundreds of awesome variations out there all over the on the internet, but this one is my all time favorite. Toasted sourdough, creamy avocado, a rich soft boiled egg, spicy sriracha mayo, crisp slices of fresh radish, and bright ribbons of curled scallion come together to make this toast incredibly tasty and totally delicious.

When you think about open faced bagel sandwiches, lox, or smoked salmon, probably comes to mind. Now take that mental image and keep all of its deliciousness but swap out the smoked salmon for fresh slices of tomato and add everything bagel seeds to help make this open-faced sandwich even more next level. The cream cheese is great as-is, but if you're feeling a little bit more adventurous, add some chopped cucumber and fresh mint. You could even add some turkey on top for a little bit more protein. The possibilities of making are endless here!

A simpler version of this recipe originally appeared in Bon Appetit Magazine but has since been enhanced by simply adding honey to balance out the savory and salty flavors! If you're unfamiliar with this type of breakfast, peanut butter toast is a simple and fast way to instantly get protein into your system and also helps boost low blood sugar levels. When sriracha, lime juice, and cilantro are added, this open-faced Thai sandwich gets even more flavorful and much more exciting. Even though it sounds sort of strange, believe me, once you try this Thai Toast, you'll have a new go-to breakfast that's quick, easy and delicious. And best of all, it's good for you!

I originally had this open-faced sandwich at ABC Kitchen in New York City in the Fall of 2013. It features seasonalkabocha squash blended with cinnamon and a little bit of honey, thus enhancing its natural flavors. Adding goat cheese brings an extra pop of tartness, while the fresh mint balances everything out with its herbaceous goodness.
And although kabocha squash is recommended, I've tried this recipe with butternut squash and yams and it is equally as delicious.
