Orange slice cookies are made with butter, vanilla, oats, coconut and one surprising ingredient: citrus slice candies.
- 1 cup light brown sugar (firmly packed)
- 1 cup sugar
- 1/2 cup shortening
- 1/2 cup butter
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups quick-cooking oats
- 2 cups orange slice candies (finely snipped)
- 1 cup flaked coconut
Gather the ingredients and preheat the oven to 350 F.
In a large mixing bowl, cream together the sugars with shortening and butter until light and fluffy.
Add the eggs and vanilla extract; beat well.
In a separate bowl, combine flour, baking soda, baking powder, and salt. Stir to blend.
Stir dry mixture into the creamed mixture.
Add in oats, orange slice candy, and coconut and stir to combine.
Shape into 1-inch balls and place on a greased cookie sheet.
Bake for 10 to 12 minutes, until lightly browned.
Remove to wire rack to cool.
