Pan-Roasted Dinners (Great for Wintertime)

Roasting the entire meal is one pan is an easy way to feed a family on a weeknight or on a busy weekend when errands have consumed most of the day. Just plop the meats and vegetables, along with some seasonings and maybe a sauce, into a roasting pan, put it in the oven, and in about an hour or so, depending on how long it takes to cook the meat, you'll have a complete dinner ready for four to six people.

Once you get the hang of roasting your dinner, you can vary these recipes any way you'd like. Remember that the more quickly roasted meats, like fish and chicken breasts, should be paired with delicate vegetables like mushrooms, bell peppers, and yellow squash; while beef roasts, chops, and whole birds can be roasted along with potatoes, carrots and other root vegetables.
