- 1 cup butter (room temperature)
- 1 1/2 cups confectioners sugar divided)
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 3/4 cup pecans (chopped)
- 1/4 teaspoon salt
Steps to Make It
Cream butter and then gradually beat in 1/2 cup confectioners sugar. Add 1 teaspoon vanilla, the flour, pecans, and salt. Blend well. Chill the mixture for 1 to 2 hours in the refrigerator.
Shape dough into crescents, using about 2 teaspoons for each cookie. Don't worry if your shapes aren't perfect. As you move through the dough, you'll likely find that you get better with practice and your crescent shapes will become more uniform. Place cookies on parchment-lined baking sheets and bake at 300 F for 18 to 20 minutes. They should be just golden brown. You may need to rotate the cookie sheets halfway through the baking to get a more even bake.
Cool the cookies on the rack until just slightly warm.
Combine 1 cup confectioners' sugar and 1 teaspoon vanilla.
Roll warm cookies in confectioners sugar and vanilla mixture until they are coated. Let them fully cool on a baking rack. Store them on a plate for a day or two and then a sealed container for any longer.
