Use your favorite pizza crust recipe to make a deep dish or thin crust pizza with a tasty topping of leftover pulled pork and barbecue sauce. The list of ingredients might seem long, but you may substitute a ready-made crust for homemade, and instead of homemade sauce, use about 1/2 cup of your favorite bottled barbecue sauce.
- For the Homemade Pizza Crust:
- 1 envelope active dry yeast (about 2 1/4 teaspoons)
- 1 cup water (warm, about 105 F to 110 F)
- 1 teaspoon sugar
- 2 1/4 to 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons olive oil
- For the Sauce:
- 1 tablespoon olive oil
- 1 clove garlic (finely minced)
- 2 tablespoons onion (finely minced)
- 3/4 cup ketchup
- 2 teaspoons Worcestershire sauce
- 1/3 cup cider vinegar
- 2 tablespoons brown sugar (packed, light or dark)
- Dash salt
- 1/8 teaspoon black pepper (ground)
- Dash cayenne pepper
- For the Toppings:
- 1 to 2 plum tomatoes (thinly sliced)
- 1 cup pulled pork (chopped, leftover)
- 1/2 to 3/4 cup red onion (thinly sliced)
- 1/2 cup peppers (thinly sliced)
- Optional: black olives (sliced)
- Optional: jalapeno peppers (sliced)
- 4 ounces mozzarella (shredded)
- 2 to 4 ounces cheddar cheese
Pour the warm water into a cup and sprinkle the yeast over the top. Add the sugar; stir and let stand for about 10 minutes.
Combine 2 1/4 cup of the flour and the salt in a mixing bowl. Add the olive oil and the water and yeast mixture. Stir to make a stiff dough and turn it out onto a floured surface. Knead, for about 5 to 7 minutes, adding more flour if necessary.
Gather the dough into a ball and put it in an oiled bowl. Turn to oil all sides. Cover with a kitchen towel and let it rise for about 30 minutes.
While the dough is rising, prepare the sauce.
In a saucepan over medium heat, saute onion in olive oil until tender. Add garlic and cook for 1 minute longer.
Add the ketchup, Worcestershire sauce, vinegar, brown sugar, salt, and black and cayenne peppers. Bring to a simmer; reduce heat to low and cook, stirring frequently, until thickened.
Roll and stretch the dough to fit a regular or deep dish pizza pan.
Spread about 1/2 cup of the sauce over the crust. Top with the pulled pork, tomatoes, onion, bell pepper, and other toppings. Sprinkle the cheeses over all.
Bake pizza at 425 F for about 20 minutes or until crust is lightly browned, or follow the directions for your particular pizza crust recipe and method.
- Replace the pulled pork with shredded chicken or beef.
- Add thin strips of bell pepper to the toppings.
