This recipe comes courtesy of the folks at Jelly Belly, who say "Don’t carve – just bite! Covered in orange-colored Jelly Belly jelly beans, these amazing cakes are the spitting images of your favorite autumn gourd. And no seeds to dig out!"
You can bake your own homemade spice or carrot cupcakes, or just grab a box of spice cake mix. And of course you might want to mix up your own homemade vanilla frosting, or just grab a can from the supermarket.
This is the perfect kind of cooking project to engage your children in. Kids will be thrilled to mix the food coloring into the frosting, and to decorate the cupcakes. Older kids can help younger ones, and this could very well be the centerpiece activity for a Halloween party. Make sure you have jelly beans in all different shades of orange so that the pumpkins take take on a cool dimensional look. You could also get crazy and make pumpkins in different colors.
- 12 cupcakes (spice flavored, paper liners removed)
- 16 oz vanilla frosting (1 can)
- A few drops orange food coloring (as needed)
- 6 cups jelly beans (about 3 lbs Jelly Belly in flavors Chili Mango, Cantaloupe, Sunkist Tangerine, Sunkist Orange, and Orange Sherbet, you want a variety of shades of orange)
- Tint the vanilla frosting pale orange with the food coloring.
- Trim the tops of 6 cupcakes to make level. Spread some of the orange frosting on top of one of the trimmed cupcakes. Press 2 cupcakes together, trimmed sides touching, to create 3 tall pumpkin shapes (see the photo).
- Working on one tall cupcake pumpkin shape, cover the cupcake with some of the orange frosting. To make pumpkins with horizontal rows start at the base of the cupcake and arrange a row of Jelly Belly jelly beans horizontally around the base. Please use the photo for reference! Continue adding horizontal rows to cover the entire double cupcake pumpkin. To position beans vertically, start out with a straight row running from the top of the cupcake to the bottom. Continue with rows of different shades of orange jelly beans to create the ribs of the pumpkin. Repeat with the remaining single and double cupcakes and Jelly Belly beans.
- For the stem, cut the Jelly Belly Chewy Fish in half crosswise. Using the tail half, insert the cut end into the top of the cupcakes to make the pumpkin stem.
