Place all of the ingredients into a food processor fitted with the S-blade and process for 30 seconds or until you reach the consistency you're happy with.
Serve immediately or set aside at room temperature. If refrigerated, you may wish to warm up your mashed cauliflower and parsnips slightly in a pan over low heat before serving.
