This recipe uses the most straightforward method ever invented for getting perfectly emulsified vinaigrette. The secret is a touch of Dijon that, when shaken, keeps the oil and vinegar mixed. That's the signature of this excellent salad dressing.
- 1/2 cup red wine vinegar
- 1 1/2 cups olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
- 1 teaspoon Dijon mustard
- Optional: 1/2 clove crushed garlic
Combine all ingredients in a glass jar with a screw-on lid.
Tighten the lid and shake vigorously for 1 minute before serving.
