We just love this recipe for Scotch Chocolate Cake. Each and every time you take this chocolate sheet cake to a party or potluck, you will come home with an empty pan.

Ingredients

  • For the Cake:
  • 2 cups flour
  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 4 tablespoons cocoa powder
  • 1 cup water
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • For the Icing:
  • 1/2 cup butter
  • 4 tablespoons cocoa powder
  • 6 tablespoons milk
  • 1 pound box powdered sugar (less than full box)
  • 1 teaspoon vanilla
  • 1 cup nuts (chopped and lightly toasted)
  • 1 cup flaked coconut

Steps to Make It

For the Cake

  1. Preheat oven to 350 F. Grease a 9 x 13" pan.

  2. Combine flour and sugar. Set aside. Put butter, oil, cocoa, and water in pan.

  3. Bring to a rapid boil. Pour into flour and sugar mixture. Mix well. Add last set of ingredients. Mix well.

  4. Put into pan and bake for 30 minutes.

For the Icing

  1. Bring butter, cocoa, and milk to a boil in same pan from above.

  2. Stir to prevent burning. Remove from heat and add rest of ingredients.

  3. Spread on hot cake.
