Decadent Scotch Chocolate Cake

I just love this recipe for Scotch Chocolate Cake. Each and every time I've taken this chocolate sheet cake to a party or potluck, I come home with an empty pan.

Ingredients

  • For the Cake:
  • 2 cups flour
  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup vegetable oil
  • 4 tablespoons cocoa powder
  • 1 cup water
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • For the Icing:
  • 1/2 cup butter
  • 4 tablespoons cocoa powder
  • 6 tablespoons milk
  • 1 pound box powdered sugar (less than full box)
  • 1 teaspoon vanilla
  • 1 cup nuts (chopped and lightly toasted)
  • 1 cup flaked coconut

Steps to Make It

For Cake -

  1. Preheat oven to 350 degrees. Grease a 9 x 13 pan.

  2. Combine flour and sugar. Set aside. Put butter, oil, cocoa and water in pan.

  3. Bring to a rapid boil. Pour into flour and sugar mixture. Mix well. Add last set of ingredients. Mix well.

  4. Put into pan and bake for 30 minutes.


For Icing -

  1. Bring butter, cocoa and milk to a boil in same pan from above.

  2. Stir to prevent burning. Remove from heat and add rest of ingredients.

  3. Spread on hot cake.
