  • 2 slices Texas toast

  • 3 to 4 ounces grated Alpha Tolman cheese, divided

  • 4 slices tomato

  • Kosher salt, to taste

  • 2 large eggsfirmly scrambled

  • 1 teaspoon finely chopped chives

  • 2 teaspoons salted butter

  • Garlic habanero hot sauce, to taste, optional

Steps to Make It

  1. Gather the ingredients.

  2. Arrange half the cheese onto one slice of bread.

  3. Next, dab your tomato with a paper towel to remove the excess moisture and sprinkle with salt. Lay the tomato on top and then cover with the scrambled eggs and the chives.

  4. Add the remaining half of the cheese on top and finish by adding the remaining top piece of bread. Smear both sides of the sandwich with the butter.

  5. Add your buttered sandwich to a medium skillet over medium heat. Cook the grilled cheese until one side has become golden-brown and the cheese has started to melt.

  6. Flip the sandwich and repeat until both sides are equally toasted and the cheese has melted.

  7. Remove from heat and let sit for a minute so the cheese can thicken back up and the flavors can intensify. Cut in half and serve with the hot sauce, if using.
