When you want to warm up and fill up, my family-friendly casserole is the go-to dish for a weeknight or weekend dinner. A combination of the fan-favorite sloppy joe and crispy tater tots will have adults and kids rushing to the table and ready to dig in.

Even better? There are peppers and onions mixed into the casserole base, letting you put vegetables on everyone's plate and into their bellies. I know we're all trying to work our way to the suggested serving and every little bit counts.

While the origin of the sloppy joe may be contested, there's something we can all agree's legendary and delicious! Adding in extra sharp cheese (meaning it's aged longer than sharp cheddar cheese) gives this supper a creamy element with a slightly tangier taste. The crunch of the tater tots offers up plenty of texture, something that's becoming a major player in why we love certain foods.

No matter when you serve this comforting and easy-to-make main, I know the flavor will take over your taste buds. Enjoy every helping whether you eat it today, tomorrow, or make ahead!

Cook's Note: You can keep the casserole leftovers in the fridge for 34 days or in the freezer for 26 months.

If you love my unique take on a sloppy joe, then a sloppy joe-inspired pizza might be the next meal on your menu. Give a Friday night treat a homemade hand with this crowd-pleasing recipe.

What You'll Need

  • 2 lbs ground beef
  • 1 (14-oz) bag frozen peppers and onions
  • 1 (15-oz) can sloppy joe sauce
  • 2 oz cream cheese
  • 4 oz pasteurized prepared cheese product
  • 3 cups shredded extra sharp cheddar cheese, divided
  • 1 bag frozen tater tots

How to Make It

Preheat the oven to 425°F.

Heat a large sauté pan over medium-high heat. Sauté the ground beef until cooked through and no longer pink. Add the peppers and onions and sauté until defrosted, about 5 minutes.

Drain the grease from the beef and vegetables and place the beef back into the sauté pan. Reduce the heat to medium, add the sloppy joe sauce, cream cheese, and cheese product. Stir until the cheeses have melted.

Place the meat and cheese mixture into a 13" x 9" baking dish. Top with 2 cups of cheddar. Spread the tater tots over the surface of the meat and cheese. Top with the remaining cheese and bake for 45 minutes, or until bubbly and the tater tots have browned.
