Looking for a new way to enjoy pork chops? Give them a Southern cooking flair by smoking them–right in your oven. This smoked pork chop recipe includes scalloped potatoes with onions that are baked into a casserole for a savory taste.
These aren't "smoked" in the traditional sense. The pork chops are first sautéed and then baked over the potato and onion mixture. In other words, you use your own oven–not a smoker.
Pork Chop Cooking Tips
- Season the meat well before cooking to give it extra flavor–they take on flavor very well in a short amount of time.
- Take the pork chops out of the refrigerator about 15 minutes before they touch the pan. This ensures they cook more evenly. You don't want to put them directly from the refrigerator onto a hot pan as it can shock the meat and cause uneven cooking.
- According to the United States Department of Agriculture (USDA), the pork chops should be cooked until they reach an internal temperature of 145 F. To determine when they are done, use a meat thermometer and insert it into the thickest part of the chop.
- Bone-in pork chops take longer to cook but typically have better flavor.
- Brining the pork chops before cooking them gives the meat extra flavor and juiciness.
- Upon cooking, let the meat rest for a few minutes, which can help it become more tender.
- 4 cups potatoes (raw, sliced)
- 1/2 cup onion (sliced)
- 2 tablespoons all-purpose flour
- Dash salt
- Dash pepper
- 1 1/2 cups milk (heated)
- 4 smoked pork loin chops
Slice potatoes and onions relatively thinly. You want them to cook quickly and evenly.
Place a layer of sliced potatoes and sliced onion in a greased 2-quart casserole.
Sprinkle the potatoes and onions with a little flour, salt, and pepper. Repeat layers, ending with potatoes and onion. Pour milk over the potatoes and onions.
In a skillet over medium-high heat, brown pork chops on both sides and then place them over the potatoes.
Cover and bake the casserole at 350 F for 45 minutes. Uncover and bake an additional 15 minutes or until the potatoes are tender.
