Chunks of beef are marinated in Spanish sweet paprika, garlic, and oil, then grilled on the barbecue. After cooking, drizzle with a zesty dressing over the top. Simple and easy, but oh so tasty!
Gather the ingredients.
Peel and finely chop the garlic and parsley. Place the beef cubes in a glass or ceramic bowl. Sprinkle paprika on top and add garlic, parsley, and olive oil. Mix thoroughly. Cover with plastic wrap and refrigerate for at least 1 hour, and up to 3 hours.
After marinating beef, thread onto metal skewers, leaving space between the cubes. Grill on a hot barbecue, turning often to cook evenly.
To make the dressing, beat the paprika, vinegar and oil with a wire whip to blend thoroughly.
Remove the kabobs from barbecue when beef is cooked. Place on plates and drizzle dressing on top. Sprinkle rosemary on top. Serve with rice.
