Now that we’re in the heart of spring, the amount of amazing produce available is nothing short of inspiring. Farmers’ markets are busting at the seams. If you can make even one trip to a farmers’ market or even a farm with your kids, and let them see and smell the array of fresh food available at this time of year, it will do wonders in terms of opening up their eyes to how incredible this season’s food is.
Let them pick out their favorite fruits and vegetables, ask a farmer a question or two, and take a taste of something that intrigues them — farmers are always delighted to talk with kids and let them taste their products.
And then, put your loot to work! Here are some suggestions for ways to do just that:over the season.
- Apricots - These go beautifully with many cheeses, so add them to a stunning cheese platter.
- Artichokes - They are perfect just steamed but also trim them and add them to a risotto for a wonderful spring dinner.
- Asparagus - Try Simple Roasted Asparagus with Shallots and Parmesan - roasting asparagus (and all kind of other vegetables) brings out the natural sweetness.
- Beets - Try Red and Yellow Beets and Sauteed Beet Greens
- Fava beans - Try Spring Pasta with Fava Beans and Peas, and read up on how to peel or shell them first.
- Fennel - Try Thin Spaghetti with Fennel, Bacon and Parmesan
- Fiddleheads - these are really nice simply sauteed.
- Greens - whatever you find in the farmers' market, toss them into a skillet, saute them up, and leave them clean and simple, maybe with some light Asian seasonings.
- Leeks - feature them in a Leek, Mushroom and Goat Cheese Quiche.
- Lettuce - in spring, salads are king, such as this Baby Romaine, Chickpea, and Root Vegetable Salad with Slightly Spicy Dressing
- Morels and other mushrooms - Try Mushroom, Caramelized Onion and Feta Frittata
- Spring onions or scallions -- Some Tomato Scallion Rice, perhaps?
- Parsley - Add a nice fresh touch to Hot Crab and Corn Dip
- Peas - Try Pasta with Ramps, Edamame, and Sugar Snap Peas in a Light Parmesan Cream Sauce
- Potatoes - Potato salads belong to the warm weather months....try Potato and Egg Salad with Bacon

- Ramps - Try Spring Ramp and Pea Risotto, or Ramp Chimichurri Sauce
- Rhubarb - Try Rhubarb Crumble

- Spinach - Try Hot, Creamy Spinach and Goat Cheese Dip
- Strawberries - Try Ricotta Berry Breakfast Crostini
- Swiss chard - Try Clean and Spicy Asian Greens
- Turnips - Try Turnips with Turnip Greens Soup
- Watercress - Try Seasoned Korean Watercress
