Creaming the butter and sugar is the first step in the actual dough-combining process. While this recipe only requires butter and white granulated sugar, others may call for shortening or brown sugar as well. Next, add the egg, milk, and vanilla. Scrape down the bowl and paddle attachment with a rubber spatula to make sure everything has combined thoroughly.

    Mix the Dry Ingredients

In a separate bowl, sift together the flour and baking powder. Gradually add the dry flour mixture to the wet butter mixture with the mixer running on low (any faster and the flour will go everywhere!). Mix until just combined—you don't want to overwork the dough or the cookies will turn out tough.

Once the dough has chilled, remove it from the plastic wrap and drop it onto a lightly-floured work surface. Cover a rolling pin with flour so the dough won't stick and roll out it out to about one-eighth of an inch thick.
