Stewed fruits make for a delicious dessert, but you can also sneak them into a breakfast or decadent brunch menu. While most stewed fruit recipes call for hours of watchful cooking, this recipe uses your slow cooker so you can go about your day while your fruit cooks.
We love the sweetened mixture of prunes, dried apricots, and pears with and a hint vanilla and fresh lemon juice. Add a cinnamon stick or two if you like.
Ingredients
- 16 ounces prunes, pitted
- 8 ounces dried apricots
- 8 ounces dried pears
- 3 cups water
- 1/2 cup granulated sugar
- 1/2 vanilla bean or 1/2 teaspoon vanilla extract
- 1 teaspoon finely grated lemon zest
- 2 tablespoons fresh lemon juice
