The original article for Stir-Fry Spinach with Garlic Recipes only contained one simple stir-fry spinach with garlic recipe but there are so many different ways to prepare this dish in Chinese cooking. So I have added more recipes for stir-fried spinach in this article and hope that you will be able to give it least one or two versions a go.

 

As always, how much seasoning you add comes down to personal preference. Feel free to reduce the amount of salt or other ingredients that accompany each version of this dish.

 

In the East, we use spinach stalks and leaves but in the West people tend to only use spinach leaves or baby spinach. Recipes 2 and 3 use both the stalks and leaves so if you only one of these make sure you double the quantities used.

 

Another cooking tip for cooking green leaf vegetables in Chinese cooking: Add 1 or 2 drizzles or rice wine before turning off the fire. This will make the vegetables taste even better.

  • Recipe 1 Ingredients:
  • 2 tablespoons peanut or vegetable oil for stir-frying
  • 2 teaspoons minced garlic
  • ¼ teaspoon chili paste, or to taste
  • ½ teaspoon salt, or according to taste
  • 10 ounces (approximately) fresh spinach, rinsed and dried.
  • ¼ teaspoon granulated sugar
  • ¼ teaspoon sesame oil
  • Black pepper to taste, optional

  • Recipe 2: Stir-fry Spinach With Sesame Oil and Ginger
  • Recipe 2 Ingredients:
  • 1 bunch of spinach
  • 2 slices of ginger and julienne them
  • 1 tablespoon goji berries (optional)

  • Recipe 2 Seasonings:
  • ½ tablespoon toasted sesame oil
  • ½ tablespoon cooking oil
  • Couple drizzle rice wine
  • Salt to taste

  • Recipe 3: Stir-fry Spinach with Shiitake mushroom and garlic
  • Recipe 3 Ingredients:
  • 1 bunch of spinach
  • 4-5 fresh shiitake mushroom, wipe it clean and remove to stalks and slice it.
  • 1 clove of garlic, mince it

  • Recipe 3 Seasonings:
  • Salt to taste
  • Couple drizzles of rice wine 

Steps to Make It

Recipe 1 Procedures:

Have all the ingredients at hand near the stove. Preheat the wok and add oil, swirling so that it comes about half way up the sides of the wok. When the oil is hot, add the minced garlic, chili paste, and salt. Stir for a few seconds until the garlic is aromatic.

Add the spinach, stir for 1 to 2 minutes, until the leaves are almost wilted. Stir in the sugar and sesame oil. (Note: if you don’t already have the sugar and sesame oil measured out, move the wok to a cold burner while you do so, and then return it to the heated burner).

Sprinkle the spinach with a bit of black pepper if desired. Serve immediately. 

 

Recipe 2 procedures:

Wash the spinach and drain. Slice it 3-4cm lengthways. We will use the spinach leaves and stalks. Please use double amount of spinach if you only use leaves or baby spinach.

Soak goji berries in cold water to soften. This will take about 10-15 minutes. After it’s softened please drain the water and leave aside.

Heat up sesame oil with cooking oil in a wok. Stir-fry the ginger first until the aroma comes out. But please be careful not to burn the sesame oil otherwise it will make this dish taste bitter.

Add spinach and stir-fry for 10 seconds.

Add goji berries and mix evenly.

Add rice wine and stir-fry for further 10 seconds, add salt and ready to serve.

 

Recipe 3 Procedures:

Wash the spinach and drain. Slice it 3-4cm lengthways. We will use the spinach leaves and stalks. Please use double amount of spinach if you only use leaves or baby spinach.

Heat up 1 tablespoon oil in the wok and stir-fry garlic first until the fragrant comes out.

Add shiitake mushroom and stir-fry for 10 seconds.

Add spinach and stir-fry for 10 seconds.

Add drizzle of rice wine and stir-fry for 5-10 seconds and season this dish with some salt. Ready to serve.
