If you've been faithfully sticking to your sugar-free diet since the new year began, perhaps you are ready to indulge in a little something sweet without breaking your new healthy habits. With Valentine's Day right around the corner, maybe the typical candy gifts you've been given in the past will no longer be something you want these days. Maybe you most certainly want something with sugar, but as I've mentioned in the past, even one small treat and lead to sugar cravings after having been sugar-free for some time. It's much harder to go sugar free then indulge in sugar again and expect to not have any repercussions from it. Most often the "just a little" attitude that sometimes happens after being "good" for a while, just leads to huge sugar cravings and quite a lot of guilt as well. I've been there and done that and while it's isn't easier this way, it's a lot less painful to stick with a sustainable sugar free life style.Trying to go sugar-free for a second time is even harder. My plan has always been just to stay away from sugar all together and indulge in a cake or treats that don't lead me down that road of intense sugar cravings.
I've had it happen once and I don't want to go there ever again. Enjoy this cake with a friend or spouse, made for just 2 servings so there's no worry of left overs calling your name.

- 2 tbsp coconut flour
- 1 tbsp ground flaxseed meal
- 1 tbsp unsweetened cocoa powder
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/4 cup milk (I used 1%)
- 2 eggs
- 1/4 tsp vanilla extract
- 1 tsp chocolate liquid stevia (or favorite sugar-free sweetener that equals1/2 cup)
- 3 drops of red food coloring
- 2 ounces sugar-free chocolate bars or 85% dark chocolate bars (broken in pieces)
Whisk the coconut flour, flaxseed, cocoa powder, salt and baking powder together.
In another bowl whisk the milk, eggs, vanilla extract, stevia and food coloring.
Add the dry ingredients into the wet and stir until combined.
Adjust food coloring to the redness you desire.
Spray two ramekins or microwave safe mugs with cooking spray.
Pour batter evenly into each dish.
In the center of each batter, insert the broken chocolate pieces.
Microwave one cake at a time for about 1 minute and 30 seconds.
Enjoy warm right from the dish!
