Summer is almost here - it's the season of bridal showers, graduation parties, Memorial Day, Fourth of July, and Labor Day. Picnics and dinners on the porch are all part of this wonderful season. For the easiest way to entertain, make a couple of these salads ahead of time. Then when your guests arrive, just pull them out of the fridge and let everyone help themselves. When you choose your salads, especially if you serve more than one, make sure that you think about picking a variety of meats, vegetables, and fruits, colors, and textures.

This is one of the first main dish salads I ever made, and it remains a firm favorite. Make it in summer when basil and tomatoes are at their peak. You can make your own pesto or purchase some from the store.
