Tilapia is a mild white fish that lends itself to all kinds of flavorful sauces and toppings. Another advantage is that the rather thin fillets cook quickly. Bake it, pan fry it, or batter it and deep-fry it.

According to Seafood Watch,  farmed tilapia from the Peru and Ecuador are the best choices, while China, Taiwan, Mexica, and several other locations are "good alternatives."
