This simple tofu scramble might not win any recipe awards, but it's quick, easy, hot, and it gets the job done. What makes this such a great basic tofu scramble recipe for vegetarians and vegans in a hurry? It relies on salsa for seasoning and flavor, which means you don't have to spend even a single minute chopping onions, garlic, mushrooms, or bell peppers (though you certainly could add those in, if you'd like). Nor do you have to spend a few minutes waiting for onions and garlic or other veggies to cook. All you have to do is toss in your tofu, open a jar of salsa, get a bit of salt, pepper, and nutritional yeast, and you're ready to go.
Eat your quick tofu scramble on the run by wrapping it up in a flour tortilla to make a vegetarian breakfast burrito. You can add a bit of cheese, vegan cheese, extra salsa, or sour cream, or just sit down and devour it with a fork. Either way, enjoy!
Ingredients
- 1 block tofu (firm or extra-firm; drained)
- 2 to 3 teaspoons oil
- 1/2 onion (diced)
- Optional: 1/3 teaspoon turmeric
- Optional: 2 teaspoons nutritional yeast
- 2/3 cup salsa
- Kosher salt (to taste)
- Freshly ground black pepper (to taste)

Gather the ingredients.

If you have extra time, press the tofu for 30 minutes to remove excess moisture so it absorbs more flavor. Skip this step if desired or when using pre-pressed tofu.

Cut the tofu into 1-inch cubes.

In a large skillet or frying pan, sauté the onion in a few teaspoons of oil until barely soft (about 2 to 3 minutes).

Add the tofu and allow to cook. Stir frequently and add more oil as needed.

Add the turmeric and nutritional yeast, and stir until the tofu is well coated.

Add the salsa and, stirring frequently, cook for another 1 or 2 minutes until the salsa is hot and well combined with the tofu.

Season generously with salt and pepper.
Tip
- While the turmeric is optional, it gives the scramble a nice yellow color.
