Fresh peaches really come into their own in the month of August. Buy a case and eat them until they're gone! They combine so wonderfully with many other ingredients, including tomatoes, avocados, chicken, cheeses, and meats. Peel them by using a sharp-bladed paring knife, or drop them for a few seconds into boiling water. Then plunge them into ice water and let stand 30 seconds; the peel will slip right off.
