    McDonald's created a cultural phenomenon when they introduced the McRib Sandwich and brilliantly it appears only for limited amounts of time. That sandwich relies on a formed rib looking patty made from pork scraps. This version starts with Baby Back Ribs, cooked however you prefer, and piles on grilled red onions, pickles, and barbecue sauce, all sandwiched between garlic cheese toast. This McRib is the better sandwich and will keep you off the McRib trail forever. 

    At the heart of this...MORE sandwich is a full rack of baby back ribs. They will have more flavor if they are slow smoked, but I'm not going to judge. If you need a method for cooking ribs try the one of these that matches your equipment:

    The secret with the ribs for this sandwich is to overcook them so that they are literally falling off the bone. Sandwiches with bones are not good.

    You will also need:

    • An unsliced loaf of bread
    • One stick of softened butter
    • 1/3 cup finely grated Parmesan
    • 1 teaspoon garlic powder
    • A jar of good dill pickle slices
    • One or two red onions, cut into 1/2-inch slices
    • Olive Oil
    • Barbecue Sauce

    Cut the Red Onion into slices about 1/2 to 3/4 or an inch thick. Keep the slices together as best as possible and brush heavily with olive oil. Place on a very hot grill and cook on both sides until well marked. Don't overcook the onions. They should still have some crunch to them. When done, set aside. The onions should be done at about the same time as the ribs.

    This sandwich needs good, thick bread so it will be manageable. If your local market has a regular loaf of bread cut into thick slices (about 1-inch thick) then buy it. Otherwise, buy an unsliced loaf of bread and cut it into thick slices.


    • one stick of softened butter
    • 1/3 cup finely grated Parmesan
    • 1 teaspoon garlic powder

    Mix all these ingredients well and spread on one side (and one side only) of the bread. Heat a skillet to a high temperature and place the bread, buttered side down on the...MORE hot surface. It takes about one minute to toast the bread properly but watch so that it doesn't burn. The bread should be golden brown on one side. The toasted side will make the outside of the sandwich.

    For this sandwich, you will need ribs that have been cooked to just the point where the bones can be lifted out of the meat easily. If the pork is cooked too much more than this, then the sandwich won't hold together. The best way to get fall off the bone ribs like this is to tightly wrap the rack in foil and let it finish cooking. This will help to steam the meat from the bone. 

    With the ribs completely cooked, remove the bones and cut the rack and cut it into three equal parts (this is...MORE based on a single, full rack of baby back ribs with about 9 bones). The meat sections should be about the same size as one of the slices of bread.

    Heat about 1 cup of barbecue sauce in the microwave for about 45 seconds. Place one slice of bread, toasted side down, on a plate. Top with one of the sections of rib meat. Add red onion slices, pickles, and heated barbecue sauce. Top with another slice of bread, toasted side up.

    I promise you, this will be one of the best sandwiches you have ever eaten and that it will put that fast food thing to shame.
