This unicorn birthday cake is an explosion of color and candy, The three layers are each tinted to a different shade of purple, pink, and teal. They're then coated with decadent layers of sweet vanilla buttercream frosting. The frosted cake is adorned with all of your favorite gummy bears, gumballs, sour candies, lollipops and more. Ingredients

  • For the Cake:
  • 1 cup unsalted butter (softened)
  • 2 cups sugar
  • 4 eggs
  • 3 cups cake flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 1/2 teaspoons vanilla extract
  • Pink, purple, and teal food coloring
  • For the Vanilla Buttercream Frosting:
  • 2 (1-pound) boxes confectioners’ sugar
  • 1 cup butter (softened)
  • 6 tablespoons milk
  • 1 teaspoon vanilla extract
  • For the Unicorn Decorations:
  • Colorful candies (Such as gumballs, gummy bears, sour candies, lollipops, etc.)
  • Gold candles

Steps to Make It

  1. Gather the ingredients. Preheat the oven to 350 F. Grease and flour three 8-inch round baking pans. (Alternately, if you only have one or two 8-inch round baking pans, each layer can be baked one and a time.)

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add eggs one at a time to the creamed mixture, beating well after each addition.

  4. In another large bowl, mix together the cake flour, baking powder, and salt.

  5. Add the flour mixture to the butter mixture alternately with the milk and vanilla extract, blending after each addition until smooth. Do not over-beat.

  6. Evenly divide batter into 3 bowls. Tint each batter separately with the teal, pink, and purple food colorings.

  7. Pour the tinted batter into the prepared pans. Bake for 20 to 25 minutes or until a tester inserted into the cake comes out clean.

  8. Cool in the pans for 10 minutes. Remove cake layers from the pans and cool completely on wire racks.

  9. To prepare the buttercream frosting, combine sugar, butter, milk and vanilla in the large bowl of an electric mixer. Beat at medium speed 1 to 2 minutes, until creamy. If necessary, add more milk until frosting achieves desired consistency.

  10. Place purple cake layer on serving platter or cake stand. Top with some of the buttercream frosting. Repeat with the pink and teal layers.

  11. Use remaining frosting to evenly coat the top and sides of the cake.

  12. Use your favorite colorful candies to decorate the top of the cake.

  13. Place the desired number of candles on the cake.

  14. Slice and serve immediately or refrigerate until ready to serve.
