Pop-Tarts are a brand of toaster pastries from Kellogg's that have been on store shelves since 1964. Their signature sugary filling inside two layers of pastry crust is often topped with a sweet frosting. This recipe for unicorn pop tarts is a homemade version of the kid's classic treat prepared with a rainbow of colors. Kellogg's periodically releases limited edition flavors of their classic toaster pastries, with the unicorn variety being an instant hit. If you can't find unicorn pop-tarts on store shelves, this recipe will help you get your colorful and whimsical pop tart fix.

The pastry crust is tinted red, yellow, green, blue, and purple. It is then rolled out and cut into rectangles which are filled with a blend of sweetened cream cheese and rainbow sprinkles. Finally, each pastry is topped with a vanilla glaze and more rainbow sprinkles. This homemade version is best enjoyed fresh from the oven.
