The pastry crust is tinted red, yellow, green, blue, and purple. It is then rolled out and cut into rectangles which are filled with a blend of sweetened cream cheese and rainbow sprinkles. Finally, each pastry is topped with a vanilla glaze and more rainbow sprinkles. This homemade version is best enjoyed fresh from the oven.
- For the Rainbow Dough:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 1 cup cold unsalted butter (cut into cubes)
- 1/4 to 1/2 cup ice cold water
- Red, yellow, green, blue and purple food coloring
- For the Filling:
- 1 (8-ounce) package cream cheese (softened)
- 1/2 cup granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- Rainbow non-pareils
- For the Glaze:
- 1/2 cup powdered sugar
- 2 to 3 tablespoons milk
- 1/2 teaspoon vanilla extract
- For the Decorations:
- Rainbow non-pareils
Gather the ingredients. Preheat the oven to 400 F. Cover baking sheets with parchment paper. Set aside.
To make the dough, mix together the flour, salt and sugar in a food processor. Add butter and pulse until it turns into a crumbly meal-like texture. Drizzle with the ice water, one tablespoon at a time, and pulse until the dough begins to bind together.
Divide the dough into 5 equal-sized balls. Tint each ball red, yellow, green, blue, and purple, kneading gently to incorporate the food coloring into each ball of dough.
Pinch off small portions of dough from each color and distribute onto the rolling surface. Be sure to press and seal together each ball to create one seamless sheet of dough.
Roll out the dough using a rolling pin. Trim the edges and cut into 12 to 16 rectangles
In a medium bowl prepare the filling. Combine the cream cheese, sugar, egg yolk, and vanilla extract. Fold in the rainbow colored non-pareil sprinkles.
Spoon the filling into half of the rectangles. Top with remaining rectangles and press together with a fork. . Bake at 400 degrees F for 20 minutes.
Transfer to a wire rack and cool completely before frosting.
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until desired consistency is achieved.
Spread glaze on each rainbow pop tart. Sprinkle with additional rainbow non-pareils.
