Although we often associate pot roast with beef, pot roast simply refers to a tough cut of meat that is cooked slowly in moist heat, often with vegetables. This recipe uses a veal roast which is a cut from the shoulder; it is cooked in the slow cooker along with carrots, onions, and celery, and then topped with a rich gravy, making for a hearty and comforting dish.

The veal roast is first browned on all sides in a hot skillet so it can develop a nice outer crust and then is placed over the vegetables in the slow cooker. The moist heat is created from adding water to the skillet and scraping the bottom to release any flavorful bits; this is then poured over the roast, which is left to cook for eight hours. The meat and vegetables come out incredibly tender and juicy.

What makes this veal pot roast stand out, however, is the delicious gravy. It begins with melted butter and flour that have been cooked together, and then the liquid from the slow cooker is added along with some white wine to finish it off. Serve this slow cooker veal pot roast with the gravy over mashed potatoes for a satisfying meal. 

Ingredients

For the Pot Roast

  • 2 tablespoons vegetable oil

  • 1 (3- to 4-pound) veal shoulder roast

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 3 medium carrots, sliced

  • 2 medium onions, cut into quarters

  • 4 stalks celery, cut into 1-inch chunks

  • 1/4 cup water

For the Gravy

  • 3 tablespoons unsalted butter

  • 3 tablespoons all-purpose flour

  • 1/3 cup white wine

Steps to Make It

Make the Pot Roast

  1. Gather the ingredients.

  2. Heat the oil in a large skillet; add the veal roast and brown on all sides. Season to taste with salt and pepper.

  3. Put the vegetables into the slow cooker; place the veal roast on top.

  4. Pour the water into the skillet used to brown the roast and scrape the bottom to release any flavorful bits. Cook over low heat for 1 minute, then pour the mixture over the veal roast.

  5. Cover the crock pot and cook on the low setting for 8 to 10 hours.

  6. Remove the meat and the vegetables from the crock pot and keep warm.

Make the Gravy

  1. Gather the ingredients.

  2. Melt the butter in a saucepan and stir in the flour. Cook over low heat until smooth and bubbly.

  3. Add the liquid from the crock pot; stirring constantly, cook until thick and smooth.

  4. Add the wine and cook for 2 minutes longer. Season to taste with salt and pepper.

To Serve

  1. Slice the veal pot roast and serve with the vegetables and gravy.

  2. Enjoy.

What Does Veal Roast Taste Like?
