These vegan chocolate spice cookies are similar to a molasses or a gingerbread cookie, but with just a hint of cocoa for a chocolate flavor. - 1 1/2 cups, plus 1 tablespoon flour
- 1 1/4 teaspoon ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves (ground)
- 1/4 teaspoon nutmeg
- 1 tablespoon cocoa powder
- 1/2 cup vegan margarine
- 1/2 cup sugar (brown)
- 1/4 cup molasses
- 1 teaspoon baking soda (dissolved in 1 1/2 teaspoon boiling water)
- 1/4 cup sugar
Gather the ingredients.
Whisk together the flour, ginger, cinnamon, cloves, nutmeg and cocoa in a small bowl and set aside.
Beat together the margarine and brown sugar. Add the molasses and mix well. Add half of the flour mixture and the baking soda mixture and combine well. Add the rest of the flour mixture.
Chill, covered for at least one hour. Preheat the oven to 325 F.
Spoon dough into 1 1/2-inch balls, then roll each ball in the sugar.
Bake 13 to 15 minutes, until surfaces start to crack slightly.
