A perfect vegan blueberry pie made with fresh blueberries and accentuated with fresh lemon juice and lemon zest. If you're lucky enough to have an excess of fresh blueberries and need a recipe to use them all up, try this simple vegan blueberry pie.

Ingredients

  • 1 1/4 cups sugar

  • 1/3 cup all-purpose flour

  • 1/4 teaspoon kosher salt

  • 1/2 teaspoon ground cinnamon

  • 2 tablespoons lemon juice

  • 2 teaspoons lemon zest

  • 5 cups fresh blueberries

  • 1 pre-made pie crust, with extra dough to cover top

Steps to Make It

  1. Gather the ingredients.

  2. Preheat oven to 425 F. Gently mix together

  3. Gently mix together sugar, flour, salt, cinnamon, lemon juice, lemon zest, and blueberries.

  4. Pour into pie crust.

  5. Cover with extra dough and gently press edges to seal.

  6. Prick top several times with a fork to allow steam to escape.

  7. Bake for 40 minutes.
