A perfect vegan blueberry pie made with fresh blueberries and accentuated with fresh lemon juice and lemon zest. If you're lucky enough to have an excess of fresh blueberries and need a recipe to use them all up, try this simple vegan blueberry pie.

What You'll Need

  • 1 1/4 cup sugar
  • 1/3 cup flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 5 cups fresh blueberries
  • 1 pie crust (pre-made, with extra dough to cover top)

How to Make It

  1. Pre-heat oven to 425°.
  2. Gently mix together all ingredients. Pour into pie crust. Cover with the extra dough and gently press the edges to seal.
  3. Prick the top several times with a fork to allow steam to escape.
  4. Bake for 40 minutes.
