With just four simple ingredients, including fresh lemon juice, this easy vegan lemon frosting recipe is super lemony. If you want to try a super easy vegan frosting, this one won't disappoint. This frosting is great for cakes such as vegan white cake and vegan chocolate cake and whatever other cake you want to have some zesty lemon flavor. This frosting is also fantastic on cookies like sugar cookies, lemon cookies, etc.
Make sure you use fresh lemon juice as opposed to the bottled kind. This frosting is also easy to customize for other flavors as well. For example, switch out the lemon juice and zest with strawberry puree and extract (you could also use vanilla extract) and you have strawberry icing. The possibilities are endless and this recipe is a great stepping-stone to making any kind of frosting that you'd like.

- 2 cups powdered sugar
- 1/4 cup margarine (softened)
- 2 tablespoons soy milk
- 1 lemon (juice and zest)
With an electric mixer set at low speed, cream the sugar and margarine.
Beat in the soy milk and lemon juice.
Stir in the lemon rind.
Now, you can smooth it over cakes, cookies, and desserts alike just make sure they are cool enough first. Enjoy!
