This basic vinaigrette becomes fruity and fancy with the addition of fresh squeezed orange juice and goes perfectly with this fennel and mint salad. Using orange juice ups the flavor while using a bit less olive oil, making this vinaigrette lower in fat than other versions. With nothing but balsamic vinegar, olive oil, orange juice, salt, and pepper, this orange vinaigrette is vegetarian, vegan and gluten-free.

- 2 tablespoons balsamic vinegar
- 1/4 cup olive oil
- Juice of one orange (approx 1/4 cup)
- 1/2 tsp salt
- 1/4 tsp pepper
- Combine all ingredients except oil in a medium sized bowl.
- Slowly, while whisking briskly, add oil and combine well.
