Vegan Sweet Potato Kugel Recipe

This vegetarian and vegan kugel recipe is cholesterol-free and lower in fat than a traditional kugel with eggs. Sweet potatoes and apples are sweetened with raisins in this homemade Jewish kugel recipe. This recipe is suitable for a vegetarian Passover or for a vegetarian Hanukkah.


  • 6 small sweet potatoes (peeled and grated)
  • 3 apples (peeled and grated)
  • 1 cup raisins
  • 1 cup matzo meal
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Optional: 1 cup chopped walnuts
  • 1 cup water

Steps to Make It

  1. Pre-heat oven to 375 F.

  2. Use a food processor to grate the sweet potatoes and apples. Combine all ingredients together.

  3. Gently press into a baking dish.

  4. Bake for 45 minutes, or until lightly crisp on top.
