This vegetarian and vegan kugel recipe is cholesterol-free and lower in fat than a traditional kugel with eggs. Sweet potatoes and apples are sweetened with raisins in this homemade Jewish kugel recipe. This recipe is suitable for a vegetarian Passover or for a vegetarian Hanukkah.
- 6 small sweet potatoes (peeled and grated)
- 3 apples (peeled and grated)
- 1 cup raisins
- 1 cup matzo meal
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Optional: 1 cup chopped walnuts
- 1 cup water
Pre-heat oven to 375 F.
Use a food processor to grate the sweet potatoes and apples. Combine all ingredients together.
Gently press into a baking dish.
Bake for 45 minutes, or until lightly crisp on top.
