Make high-protein vegetarian sandwiches using this spread made from Great Northern beans and fresh herbs, or, serve it as a dip with either baguettes, veggies or crackers. Vegan bean and fresh herb sandwich spread or dip recipe courtesy of Bush's® Beans.
- 3 cloves garlic
- 2 16 ounce cans Great Northern Beans (rinsed and drained)
- 3 tbsp lime juice
- 2 tbsp olive oil
- 2 tbsp fresh basil (chopped)
- 1 tbsp fresh thyme (chopped)
- 1 tsp salt
- 1/2 tsp ground black pepper
With the motor running, drop the garlic cloves into a food processor or blender.
Add Great Northern Beans, lime juice, and olive oil; puree until smooth.
Add basil, thyme, salt, and pepper; pulse until incorporated and the herbs are coarsely chopped. Serve chilled.
