Introduction: What is Brinner?
Brinner. What? Yes, brinner. Think about a minute, Think like a kid. Think like a kid who really wants to have breakfast cereal for dinner. Brinner. Got it? Good!
Yes, it's a funny sounding word, but we all somehow got used to saying (and having!) brunch, so who's to say brinner isn't the next big thing? I can see the New York crowds now, lined up to get into the hottest new brinner place, and I'm quite certain the next Sex and the City movie will include a scene of the friends gossiping and catching up over brinner, dressed to the nines.

Vegetarian Brinner Idea #1: Breakfast burritos!
Breakfast burritos, whether made with eggs, tofu, or even a vegetarian breakfast meat substitute, make for a great brinner! Prepare the eggs or tofu, then have your family (or guests) prepare their own burritos. Great brinner burrito toppings? Salsa, avocado slices, hot sauce, green onions, fresh tomatoes or even a bit of spinach.

Vegetarian Brinner Idea #3: Breakfast Pizza!
Crack an egg on a pizza (preferably a white sauce pizza) stick it in the oven and call it a breakfast pizza. Or follow this recipe for a gorgeous vegetarian breakfast pizza which combines gouda cheese, eggs and roasted sweet potatoes.
Pizza bagels would be another great brinner pizza idea, and are easy to make vegetarian or vegan pizza.

Vegetarian Brinner Sides: Potatoes, potatoes, potatoes!
If you can have baked potatoes or oven-roasted potatoes for dinner, and fried potatoes are traditional for breakfast, what kind of potatoes should you have for brinner? Potato latkes are one great crossover idea, perhaps made with vegetables too, to make them even more "brinnery", and simple homefries with some mushrooms, tomatoes or bell peppers would be great.

Vegetarian Brinner Sides: Anything Avocado
There's something 'brinnery" about avocados, too, don't you think? Of course, that may be because I'm from California, and I think avocados go with absolutely everything. I'm not saying you should have guacamole for breakfast (though I've been known to, when avocados are in season), but here's a couple avocado dishes which strike me as perfect for a brinner side:

Standard Vegetarian Brinner Fare
What do you think of when you think of breakfast for dinner? Yes, a bowl of cereal with soy milk makes a perfectly fine vegetarian and vegan brinner, but if that's what you wanted, you wouldn't have come here!
