This basic vegetarian and vegan gravy recipe uses fresh herbs like sage and parsley to get lots of flavor. You'll need a good gravy to go with a vegetarian or vegan lentil loaf recipe, mashed potatoes, and of course with Tofurky on your vegetarian Thanksgiving!


  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1/2 teaspoon fresh parsley (minced)
  • 1/2 teaspoon fresh sage (minced)
  • 1/4 teaspoon thyme
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch, dissolved in 2 tablespoons water
  • Optional: 2 teaspoons nutritional yeast

Steps to Make It

  1. Gather the ingredients.

  2. Bring the vegetable broth to a simmer in a medium pot or large skillet.

  3. Add the soy sauce and herbs.

  4. Reduce heat to a simmer, then slowly add the cornstarch and water mixture, stirring constantly to thicken.

  5. Allow to simmer for a few minutes, until thick, and add nutritional yeast if desired.

  6. Serve with your favorite Thanksgiving dish.
