Make vegetarian tacos using mushrooms and bell peppers for plenty of healthy and nutritious flavor. You could also make this vegetarian fajitas recipe vegan by omitting the sour cream or by using a vegan non-dairy sour cream substitute.

Ingredients

  • 2 red bell peppers (cut into strips)
  • 1 1/2 cups sliced fresh mushrooms, any variety
  • 1 onion (sliced)
  • 1 tablespoon olive oil
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 4 flour tortillas
  • Optional: sour cream, shredded cabbage, avocado, lime

  2. Sautee the peppers, mushrooms, and onion in olive oil for 3 to 5 minutes.

  3. Add the spices and continue cooking for another 2 minutes, or until veggies are tender.

  4. Place a few spoonfuls of the mixture in a flour tortilla, top with sour cream and other toppings if desired.
