Vegetarian Mushroom Fajitas Recipe

Make vegetarian fajitas using mushrooms and bell peppers for plenty of healthy and nutritious flavor. You could also make this vegetarian fajitas recipe vegan by omitting the sour cream or by using a vegan non-dairy sour cream substitute. Scroll down for more vegetarian fajitas recipes.

What You'll Need

  • 2 red bell peppers (cut into strips)
  • 1 1/2 cups fresh mushrooms (sliced)
  • 1 onion (sliced)
  • 1 Tbsp. olive oil
  • 1/2 tsp. curry powder
  • 1/2 tsp. chili powder
  • 1/4 tsp. cumin
  • 4 flour tortillas
  • Optional: sour cream

How to Make It

  1. Sautee the peppers, mushrooms, and onion in olive oil for 3 to 5 minutes. Add the spices and continue cooking for another 2 minutes, or until veggies are tender.
  2. Place a few spoonfuls of the mixture in a flour tortilla, top with sour cream if desired and enjoy your vegetarian fajitas!
