This Waldorf salad is made with the addition of rice. The rice and walnuts make this a hearty, refreshing salad perfect for a hot day. The salad is colorful and full of flavor. The mayonnaise and yogurt dressing is flavored with a dash of cinnamon.
Serve the salad on spinach or baby kale along with avocado slices, pineapple rings, or orange segments.
- 2 cups red delicious apples, cored and diced, unpeeled
- 1/4 cup pineapple juice or apple juice
- 3 cups brown or white rice, cooked and cooled
- 1 cup chopped celery
- 1 cup chopped walnuts
- 1/2 cup raisins
- 1/4 cup shredded carrots
- 3/4 cup vanilla or plain yogurt, low-fat
- 3/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
In a large serving bowl, combine the diced apples and pineapple or apple juice. Add the rice, celery, walnuts, raisins and carrots; stir to blend all ingredients.
In a separate bowl, combine the yogurt, mayonnaise, salt, and cinnamon; stir to blend. Stir mayonnaise mixture into apple mixture.
Cover and refrigerate the Waldorf salad until ready to serve.
